pumpkin chocolate chip cookies

When I first baked these cookies, I had a mean hankering for something sweet to match the season. So I got out my baking ingredients, dusted off the KitchenAid, and opened a new can of pumpkin because.. well, Fall. After a little mixin' and whiskin' I threw these puppies in the oven, and by some Autumn miracle they turned out perfectly. A little cakey, but not too much, perfectly sweet, and most importantly, a healthy treat! 


Enjoy these cookies with a cold glass of almond milk, a large serving of wine, or seasonal overload. 🍂



Makes about 18 cookies.

  • 1 1/3 + 1/4 cups almond flour

  • 2 tsp cinnamon

  • 1 1/2 tsp baking powder

  • 1 cup pumpkin

  • 1/2 cup maple syrup

  • 3/4 cup almond butter

  • 2 eggs

  • 1 tsp vanilla

  • 3/4 cup dark chocolate chips

  • pinch of sea salt for topping


Preheat your oven to 375 degrees. Mix all the dry ingredients together in a bowl. Then, in a separate large bowl, combine all the wet ingredients together and mix thoroughly (leaving chocolate chips + sea salt until the end). Stir in dry ingredients little by little until all the ingredients are mixed together in the large bowl, and then finally stir in chocolate chips.

Spoon cookies onto cookie sheet, then sprinkle each with a pinch of sea salt. Place into the oven for about 17-20 min. Once done baking and the bottoms are a light golden brown, remove from the oven and place on a cooling rack. Enjoy!
