When I first baked these cookies, I had a mean hankering for something sweet to match the season. So I got out my baking ingredients, dusted off the KitchenAid, and opened a new can of pumpkin because.. well, Fall. After a little mixin' and whiskin' I threw these puppies in the oven, and by some Autumn miracle they turned out perfectly. A little cakey, but not too much, perfectly sweet, and most importantly, a healthy treat! 

Enjoy these cookies with a cold glass of almond milk, a large serving of wine, or seasonal overload. 🍂


Makes about 18 cookies.

  • 1 1/3 + 1/4 cups almond flour

  • 2 tsp cinnamon

  • 1 1/2 tsp baking powder

  • 1 cup pumpkin

  • 1/2 cup maple syrup

  • 3/4 cup almond butter

If I had to guess, I'd say that Italian goes down in our house at least once a week. Not only has it been a favorite cuisine of mine since I was little (in fact, every birthday I'd ask for spaghetti for my special dinner), but it also has so many fun elements, from lemony fish + briny olives to spicy salumis + tangy sauces.

Italian just has a special way of turning simple ingredients into something flavorful and exciting, and these Zucchini Lasagna Roll-Ups consist of just that - simple ingredients that come together and make an easy, but delicious meal for you + your crew!

Zucchini Lasagna Roll-Ups

Makes about 4-6 servings

  • 2-3 medium zucchini

  • 3 tbsp sea salt 

  • 1 tbsp avocado oil, butter or ghee

  • 1/2 white onion, diced

  • 1 lb grass-fed ground beef

  • 24 oz jar marinara

  • 1/2 cup pesto (buy a dairy-free version for Paleo; or make your own)

  • small log of goat cheese (for gluten-free) or 1/3 cup nutritional yeast (for Paleo)

Stir fry is one of those dishes that is a go-to when I have a ton of veggies in the fridge, but need to use them quickly due to spoilage or maybe if I'm heading out of town. You can pack so many vegetables into one stir fry dish, add a ton of flavor and then you've got yourself a really delicious and super easy meal! 

I add flavor in two ways: the first is when I'm actually cooking the produce, adding a little coconut aminos (fantastic Paleo/soy-free soy sauce alternative) or tamari (a gluten-free soy sauce) for umami and salt, a lot of ginger for a fresh, spicy zing, and a splash of fish sauce to balance the dish's flavors a bit. Additionally, I also add flavor at the end of cooking, when I pour in a delicious almond butter sauce (similar to peanut sauce) and top with fresh cilantro + a squeeze of lime. All these flavors come together and create an amazing symphony of complexity and balance for the tastebuds!

When I relocated to Colorado in 2012, I moved in with a family in Denver to work as a live-in nanny for two small boys. It turned out to be a disaster (I'll spare you the details!), but I did learn at least one thing - an easy sushi recipe for weekday lunches or dinners when you just need to keep it simple. 

The mom of the two boys would oftentimes make a fun sushi lunch that consisted of a scrambled egg, canned salmon, and a splash each of rice vinegar and tamari. Sounds a little strange, I know! But stick with me because it was so good. 

This recipe is slightly different, but still incorporates inexpensive canned salmon (though freshly baked is also an option), with the addition of avocado for more lovely fats, microgreens for a bonus nutrient boost + ferments to keep your gut happy along the way!

I think its wonderful to dedicate a day to celebrating L-O-V-E. Its a fun excuse to buy some flowers, eat a little chocolate and share sweet words with your partner, gal pals or yourself! But, to be completely honest, I just don't think its enough. 

No, I'm not advocating for stuffed teddy bears and red + pink balloons at the store each week, but shouldn't we take more than 24 hours to showering our loved ones, ourselves and even strangers with a little extra TLC? 

Self-love in particular could use a bump up in the priority list, don't you think? Its all too often that the busiest people I meet take care of themselves the least, leading to an empty tank and a teeter-totter on the edge of serious burnout. There's a common misconception that to go far we must push ourselves far, push hard and, yes, "sleep when we're dead". Stopping to take care of yourself along the way? Weak, selfish, undeserving. But I say thats nonsense. 

Self care is not selfish.

Pizza has always been one of my favorites for both a quiet night in or a last minute get together with friends. There's just something about biting into a piping hot piece of pizza pie that makes the heart sing!  

We are fortunate to have a seriously AMAZING pizza place down the street from our apartment called Timber Pizza Co. that is out of this world delicious! The ambiance is fun, the pizza is some of the best I've ever had, and it just feels like community in that little space. The best part? They have gluten-free crust. Homemade. Doesn't taste like cardboard.

Where have you been all my life?

The downside? Its pricey.
